Almond Cupcakes

These are delicious little almond flavoured cupcakes, they are moist and nutty a perfect afternoon snack and an ideal recipe for anyone who likes almonds.

Almond cupcakes are very simple and cheap to make. A great recipe to get children cooking and a perfect lunch box treat for them the next day, if there are any left.

Ingredient

  • 150g butter
  • 200g icing sugar
  • 70g plain flour
  • 120g ground almonds
  • 5 egg whites
  • ½ tsp almond extract

Method 

  1. Preheat the oven to 180C.
  2. Sift the sugar and flour into a large bowl, mix in the ground almonds then rub in the butter until it becomes like bread crumbs.
  3. Then beat in the egg whites and add the almond extract.
  4. Divide the mixture between 10 muffin cases and place in a muffin tin.
  5. Bake for 20 minutes, until lightly golden. To check if cooked insert a knife into one of the cakes, if it comes out clean it is ready.
