My grandfather was an ice-cream maker in Italy and they dont use eggs...personally that's how I prefer it but you can play around with recipes and end up eating loads and loads of ice-cream! Bonus!:D
I don't have salmonella concerns - I've got an iron cast stomach.
We went to an italian ice cream parlour in Scotland last year vodka - at Largs I think. My goodness, I've never had ice cream like it. Felt a bit sick afterwards mind.
