I'd give up, I'd use quorn or realeat veggie mince as, especially the later is made to taste like mince. They can be a bit sloppy so cut down on any liquids your chosen recipie might contain.
it could be that you're using tasteless chicken, as most available in the UK is mass produced. try adding one or two chicken stock cubes to the mix. you'll find them with gravy in the supermarket.
