I like my steak mooing, DH likes his well done. I have a heavy Circulon frypan that I let get VERY hot, then whack DH's steak on, wait until the sizzling settles then flip it over onto another place on the pan and leave it alone. When it starts to feel a bit harder and more rubbery then I flip it again, wait a minute or two, toss mine in, wait a minute or two, flip mine onto a bare place in the pan, wait a minute or two, turn off the pan, let steaks sit for a minute then serve.
