For four people:
4 lamb shanks
2oz/50g seasoned flour
2 chopped onions
2 crushed garlic cloves
2 chopped green peppers
2 teaspoon cumin seeds
2 teaspoons crushed black peppercorns
2 x 15oz/425g tinned tomatoes (chopped)
juice of 1 lemon
salt & pepper to taste
Roll the lamb in the seasoned flour then shallow fry in olive oil until browned on all sides. Add all the other ingredients and bring to the boil. Cover the pan and simmer for about 3 hours, until the meat falls off the bone. Yummy!
